  • 1 tablespoon baking powder

  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream or Greek yogurt (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (preferably Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F and prepare a muffin tin with paper liners.
  2. In one bowl, mix together flour, both sugars, and cinnamon for the crumble topping. Add melted butter and mix until clumps form; set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together butter and sugars using an electric mixer until light and fluffy. Add eggs one at a time followed by sour cream and vanilla; mix until combined.
  5. Gradually incorporate half of the dry ingredients into the wet mixture, then add milk and finish mixing in the remaining dry ingredients. Fold in diced apples gently.
  6. Fill muffin cups about three-quarters full with batter and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Let cool slightly before transferring to a wire rack.
