- Preheat your oven to medium heat. Peel, core, and thinly slice the apples, then mix with sugar and cornstarch; let sit for 10 minutes.
- Cook the apple mixture until softened and caramelized, about 15-20 minutes. Allow to cool slightly.
- Whisk together egg yolks, sugar, cornstarch, and salt in a bowl. Heat milk until simmering; gradually add to the egg mixture while whisking.
