- 4 lamb shanks (about 2 lbs total)

- 1 cup apple vinegar
- 2 cups beef or lamb broth

Instructions
- Preheat your oven to 325°F (163°C) for braising the lamb and another oven to 400°F (204°C) for roasting potatoes.
- Season the lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the shanks until browned on all sides. Remove and set aside.
- In the same pot, add onions, carrots, celery, and garlic; sauté until softened.
- Deglaze with apple vinegar, then stir in broth and tomato paste.
- Return lamb shanks to the pot along with herbs and bay leaves. Simmer briefly before covering.
- Braise in the oven for about 2 hours until tender.
