  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • 2 tbsp tomato paste
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • 2 bay leaves
  • Potatoes for roasting

Instructions

  1. Preheat your oven to 325°F (163°C) for braising the lamb and another oven to 400°F (204°C) for roasting potatoes.
  2. Season the lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the shanks until browned on all sides. Remove and set aside.
  3. In the same pot, add onions, carrots, celery, and garlic; sauté until softened.
  4. Deglaze with apple vinegar, then stir in broth and tomato paste.
  5. Return lamb shanks to the pot along with herbs and bay leaves. Simmer briefly before covering.
  6. Braise in the oven for about 2 hours until tender.
  7. While the lamb cooks, toss quartered potatoes with olive oil, salt, and pepper on a baking sheet. Roast until golden brown (30–40 minutes).
  8. Serve herb-infused lamb shanks alongside crispy roasted potatoes.
