- 2 hard- or medium-boiled eggs
- 1 avocado, sliced
- 1 medium sweet potato, peeled and cubed
- 1 tsp olive oil
- Salt & freshly cracked black pepper, to taste
Instructions
- Preheat your oven to 200C (400F). Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
- While roasting, boil water in a pot. Gently add eggs and cook for 7-9 minutes depending on desired yolk firmness. Cool under cold water, peel, and slice.
- Slice the avocado in half, remove the pit, scoop out the flesh and cut into slices.
- In a serving bowl, arrange roasted sweet potatoes first, followed by sliced eggs and avocado. Sprinkle with black pepper before serving.
