Ingredients
- 4 (8-inch) tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 cups chopped fresh spinach
- 8 oz sliced mushrooms
- Olive oil for brushing
Instructions
- Preheat your oven to 400F (200C).
- Microwave sliced mushrooms in a bowl for 2-3 minutes; drain excess liquid.
- Lightly brush one side of each tortilla with olive oil, then place oiled side down on a baking sheet.
- On half of each tortilla, layer half of the cheese, followed by spinach, softened mushrooms, and remaining cheese. Fold tortillas over.
- Bake for 6 minutes, flip carefully, and bake for an additional 6-7 minutes until golden brown and crispy.
