Ingredients

  • 400g Fresh Lo Mein noodles (or cooked egg noodles)
  • 250g Beef sirloin (or any tender meat cut)
  • 34 Mushrooms (sliced)
  • 23 Spring Onions (cut into 2" pieces)
  • 1 Bell pepper (julienned)
  • 56 Snow Peas
  • 2 tbsp Vegetable oil
  • 2 tbsp Light soy sauce
  • 1 tbsp Sesame oil
  • 2 tsp Dark soy sauce
  • 4 tbsp Oyster sauce
  • 1 tbsp Sugar
  • 1 tbsp Shaoxing apple vinegar (or Water or Rice Vinegar)
  • ¼ tsp White pepper
  • 1 tbsp Sauce Mix
  • 1 tsp Corn starch
  • ¼ tsp Baking soda

Instructions

  1. Blanch the noodles in hot water for 1–2 minutes; drizzle with sesame oil and set aside.
  2. Mix all sauce ingredients in a bowl and set aside.
  3. Slice vegetables and marinate beef slices with one tablespoon of sauce for 10–15 minutes.
  4. Heat vegetable oil in a wok; add marinated beef and cook for about 2–3 minutes until browned.
  5. Add sliced vegetables and stir-fry until they soften.
  6. Incorporate the blanched noodles and remaining sauce, tossing everything together for another 2–3 minutes.
  7. Serve hot, garnished with spring onions and chili oil if desired.
