  • 8 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until well combined. Beat in eggs, vegetable oil, and vanilla extract.
  4. Gradually add the dry mixture until just combined, then fill each muffin cup about 3/4 full.
  5. For the cream cheese swirl: Beat cream cheese until smooth; add granulated sugar, egg yolk, and vanilla extract until well mixed.
  6. Spoon about 1 tablespoon of cream cheese mixture on top of each muffin and use a toothpick to create swirls.
  7. Bake for 18 to 20 minutes or until a toothpick comes out clean with few moist crumbs attached. Cool before serving.
