  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar; then beat in eggs, oil, and vanilla until smooth. Gradually add the dry mixture until just combined.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin cups with batter; top with cream cheese mixture and swirl gently using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
