Ingredients
- 2 large lamb shanks (or 4 smaller ones)
- 1 large bunch fresh rosemary
- 8 garlic cloves
- 2 cinnamon sticks
- 1 small bunch thyme (approx. 5 sprigs)
- 1 large onion, chopped
- 3 stalks celery, chopped
- 2 carrots, chopped
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 3 bay leaves
- 1 teaspoon crushed red pepper flakes (optional)
- 1 cup fresh plum tomatoes, chopped
- Salt and pepper, to taste
- 4 cups chicken stock
Instructions
- Gather all your ingredients before starting. Chop the onion, celery, carrots, and garlic as described in the ingredient list.
- In a Dutch oven over medium-high heat, add a splash of oil. Once hot, add the lamb shanks and sear on all sides until browned (about 4-5 minutes). Remove the shanks from the pot and set aside.
- In the same pot, add chopped onions, celery, carrots, and garlic. Sauté until softened (about 5-7 minutes).
- Stir in smoked paprika, ground cumin, and crushed red pepper flakes (if using). Cook for another minute until fragrant.
- Return the lamb shanks to the pot along with fresh tomatoes, bay leaves, cinnamon sticks, rosemary, and thyme.
- Pour in chicken stock so that it covers the lamb slightly. Season with salt and pepper to taste.
- Bring to a gentle simmer then cover, reduce heat to low, and let cook for about 2-3 hours until tender.
- Once cooked, remove bay leaves and herb stems before serving. Plate the lamb shanks with root vegetables and ladle over aromatic gravy.
