  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (to taste)
  • Fresh coriander seeds or cilantro for garnish

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Add chicken pieces and brown on all sides; set aside.
  2. In the same pot, melt unsalted butter and sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in ground coriander, garam masala, turmeric, and chili powder; cook for an additional minute.
  4. Return the chicken to the pot and add enough water or broth to cover halfway. Stir and bring to a gentle simmer.
  5. Cover and let simmer for 20-25 minutes until chicken is cooked through. Adjust seasoning as needed and stir in crushed coriander seeds or cilantro before serving.
