Ingredients
- 400ml double cream
- 2 bay leaves
- Few sprigs of thyme
- 1 garlic clove (crushed)
- 1/2 tsp nutmeg
- 1 tbsp butter
- 1kg butternut squash (peeled and thinly sliced)
- 100g mature white Cheddar (grated)
Instructions
- Preheat your oven to 350°F (180°C).
- In a mixing bowl, combine cream, nutmeg, garlic, thyme, and bay leaves; bring to a boil then let infuse for 10-15 minutes.
- Layer half of the sliced squash in a buttered baking dish; pour half of the cream mixture over it.
- Add the remaining squash slices and cover with the remaining cream; bake covered for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for an additional 20-30 minutes until golden brown.
