Ingredients
- 2 red onions
- 3 ears of corn
- 200 g red grape tomatoes
- 200 g yellow grape tomatoes
- 1 avocado
- ¼ bunch cilantro (coriander)
- 2 tbsp olive oil (divided)
- 2 tsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup
- salt (to taste)
- pepper (to taste)
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Peel and slice the red onions thickly. Brush both the corn and onion slices with olive oil; season with salt and pepper.
- Grill the corn and onion slices for about 10–15 minutes until charred, turning occasionally. Remove from heat and let cool slightly.
- Once cooled, cut the corn off the cob and dice the grilled onions. Halve the cherry tomatoes and cube the avocado.
- In a small bowl, whisk together remaining olive oil, lemon juice, Dijon mustard, and maple syrup.
- In a large mixing bowl, combine grilled corn, chopped onions, tomatoes, avocado, and cilantro. Pour dressing over the salad mixture and toss gently to combine.
