Ingredients
- 5 1/2 tbsp butter
- 1 1/3 cups chopped carrots
- 1 cup chopped celery
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 3 1/2 cups peeled and cubed russet potatoes
- 3 cups chopped broccoli florets
- 6 tbsp all-purpose flour
- 3 cups milk (1% or 2%)
- 1/2 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add chopped carrots, celery, and onion; sauté for about 3–4 minutes until softened.
- Stir in minced garlic and cook for another 30 seconds until fragrant.
- Pour in low-sodium chicken broth and add cubed potatoes along with thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover the pot, and cook for about 15 minutes until potatoes are tender.
- Add broccoli florets and cook for an additional 5 minutes until tender.
- In a separate saucepan, melt remaining butter; whisk in flour to create a roux for one minute while stirring constantly.
- Gradually add milk while whisking until smooth; cook until thickened.
- Remove both pots from heat and combine the thickened mixture into the main soup pot along with heavy cream.
- Mix in shredded cheddar cheese until melted completely.
