  • 1/2 teaspoon salt
  • 1 cup European-style unsalted butter (browned)
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted)
  • 2 teaspoons vanilla extract

Instructions

  1. Make the brown butter by melting it in a saucepan over medium heat until golden brown. Let cool.
  2. Blot excess moisture from the canned pumpkin using paper towels.
  3. In one bowl, whisk together flour, spice blend, baking soda, and salt. In another bowl, mix cooled brown butter with brown sugar and maple syrup until smooth; stir in egg yolk, pumpkin puree, and vanilla.
  4. Combine wet and dry ingredients until just mixed. Chill the dough for at least 8 hours.
  5. Preheat oven to 350°F (177°C). Roll chilled dough into balls and coat with a mixture of granulated sugar and spice blend.
  6. Bake for 12–14 minutes until edges are set but centers remain soft. Cool on baking sheets before transferring to wire racks.
