Ingredients
- 1 lb ground chicken
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, finely chopped
- 2 tbsp chopped cilantro
- 1 tsp soy sauce
- 1/2 tsp red chili flakes (optional)
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper, to taste
- 1 tbsp vegetable oil (for frying)
- 1 cup coconut milk
- 1 tbsp Thai red curry paste
- 1 tsp turmeric powder
Instructions
- In a large mixing bowl, combine ground chicken, minced garlic, grated ginger, chopped green onions, breadcrumbs, egg, soy sauce, chili flakes (if using), salt, and pepper. Mix until well combined and form into small meatballs.
- Heat vegetable oil in a frying pan over medium heat. Cook meatballs in batches until browned on all sides (about 10–12 minutes). Set aside.
- In the same pan, add more oil if needed and sauté minced garlic until fragrant. Stir in red curry paste and turmeric powder for about 2 minutes.
- Pour in coconut milk; bring to a gentle simmer. Add cooked meatballs back to the pan and allow them to simmer for an additional 5 minutes.
- Serve warm over rice or noodles, garnished with cilantro if desired.
