  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a larger bowl, whisk together all-purpose flour, baking powder, baking soda, corn starch, and salt.
  4. Cream cubed cold butter and granulated sugar using a stand mixer until fluffy.
  5. Add eggs and vanilla extract; mix well.
  6. Gradually incorporate dry ingredients into the wet mixture until combined.
  7. Shape dough into a rectangle and spread the cinnamon filling evenly on top.
  8. Roll the dough tightly and cut it into equal pieces.
  9. Bake for 9-11 minutes until edges are golden.
  10. Allow cooling before frosting with cream cheese mixture.
