  • ½ teaspoon coconut extract
  • ¼ teaspoon salt
  • 6 cups confectioners’ sugar
  • 2½ cups sweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In one bowl, whisk together the dry ingredients: cake flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  4. Add vegetable oil, egg whites, vanilla extract, coconut extract, and coconut milk to the butter mixture; mix until combined.
  5. Gradually combine the dry ingredients with the wet mixture; fold in shredded coconut until just mixed.
