  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes (peeled & diced)
  • Italian seasoning and cayenne pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium-high heat until crispy (about 10 minutes). Remove and set aside, leaving some fat in the pot.
  2. Sauté onion, celery, and carrots in the remaining fat for about 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Sprinkle flour over the vegetables, stirring constantly for about one minute.
  5. Gradually add chicken broth while stirring to dissolve the flour.
  6. Incorporate heavy cream, corn, diced potatoes, Italian seasoning, and cayenne pepper (if using). Bring to a boil before reducing to a simmer.
  7. Cook until potatoes are tender (15-20 minutes), stirring occasionally.
  8. Season with salt and pepper before serving topped with reserved turkey bacon.
