  • 4 medium yellow onions, thinly sliced
  • 1 1/4 cups dry white wine
  • 3 cloves garlic, minced
  • 2 cups cremini mushrooms, sliced
  • 2 tablespoons fresh thyme leaves
  • 68 cups low sodium chicken broth
  • 1/2 cup heavy cream
  • 6 slices French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add onions and honey; cook until softened (about 10 minutes). Slowly stir in wine, cooking until caramelized (10–15 minutes).
  2. Add garlic, mushrooms, thyme, salt, and pepper; cook for another 3–4 minutes. Pour in broth, Worcestershire sauce, bay leaves; bring to a simmer for about 10 minutes.
  3. Stir in heavy cream; cook for an additional 5–10 minutes. Remove bay leaves before serving.
  4. Toast bread slices in the oven at 400°F until dry (10–15 minutes), then broil with cheese on top until bubbly.
  5. Serve hot in oven-safe bowls garnished with fresh herbs.
