  • 12 oz rotini or fusilli pasta
  • 6 oz Velveeta cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook pasta in salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until golden-brown (8-10 minutes). Remove and set aside.
  3. In the same skillet, reduce heat to medium; melt butter and sauté minced garlic for 1 minute. Stir in heavy cream and whole milk; bring to a simmer.
  4. Add Velveeta cheese cubes; stir until melted and smooth. Mix in cheddar, mozzarella, and Parmesan until thickened.
  5. Toss cooked pasta into the sauce; combine well.
  6. Serve topped with seared chicken and garnish with fresh parsley if desired.
