- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 12 oz medium shell pasta
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese, divided
- Reserved pasta water (optional)
- Chopped parsley (optional)
Instructions
- Cook the shell pasta in salted boiling water until al dente; drain, reserving some pasta water.
- In a large skillet, heat olive oil and butter over medium-high heat. Sear seasoned chicken until golden-brown and fully cooked; remove and set aside.
- In the same skillet, add heavy cream and cream cheese; stir until smooth. Gradually mix in Parmesan cheese until thickened.
- Combine the cooked pasta with the sauce and half of the mozzarella until well coated.
- Return the chicken to the skillet or plate it atop the pasta; sprinkle with remaining mozzarella and let melt before serving.
