Ingredients

  • 1/2 medium onion
  • 2 medium carrots
  • 14 oz young potatoes
  • 1 tablespoon butter
  • 79 oz heavy cream
  • 1/3 cup hard cheese (grated)
  • 3235 oz stock (vegetable or meat-based)
  • 1 large bunch fresh dill
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Peel and dice the onion, carrots, and potatoes. Grate the carrot.
  2. In a cooking pot, melt butter over medium-low heat and sauté the onion until translucent.
  3. Add diced potatoes and grated carrots; stir for 2-3 minutes.
  4. Pour in stock and bring to a near-boil. Reduce heat, cover partially, and simmer for about 20 minutes until potatoes are tender.
  5. Blend one cup of hot soup with cream until smooth, then return it to the pot.
  6. Stir in chopped dill, lemon juice, nutmeg, salt, and pepper. Cook on medium-low for an additional 3-4 minutes.
  7. Serve hot, garnished with additional dill and cheese flakes if desired.
