Ingredients
- 1/2 medium onion
- 2 medium carrots
- 14 oz young potatoes
- 1 tablespoon butter
- 7–9 oz heavy cream
- 1/3 cup hard cheese (grated)
- 32–35 oz stock (vegetable or meat-based)
- 1 large bunch fresh dill
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- Peel and dice the onion, carrots, and potatoes. Grate the carrot.
- In a cooking pot, melt butter over medium-low heat and sauté the onion until translucent.
- Add diced potatoes and grated carrots; stir for 2-3 minutes.
- Pour in stock and bring to a near-boil. Reduce heat, cover partially, and simmer for about 20 minutes until potatoes are tender.
- Blend one cup of hot soup with cream until smooth, then return it to the pot.
- Stir in chopped dill, lemon juice, nutmeg, salt, and pepper. Cook on medium-low for an additional 3-4 minutes.
- Serve hot, garnished with additional dill and cheese flakes if desired.
