Ingredients
- 12–14 cloves garlic
- 500 g potatoes
- 250–350 ml vegetable broth
- 60 g olive oil
- 60 ml soy or oat cream
- 3 tbsp nutritional yeast
- sea salt
- black pepper
- 2–4 slices old bread
- olive oil (for croutons)
Instructions
- Preheat oven to 200°C (400°F). Roast garlic on a baking sheet with olive oil and sea salt for about 15 minutes until golden.
- While roasting, peel and chop potatoes into cubes.
- Boil chopped potatoes in water until soft (10-15 minutes).
- Drain excess water, then blend potatoes with roasted garlic, vegetable broth, cream, nutritional yeast, salt, and pepper until smooth.
- Serve hot, topped with crispy croutons and an extra drizzle of olive oil.
