Ingredients
- 3–4 lbs ripe organic tomatoes
- 2 garlic bulbs
- 1/2 onion
- 1 Tbsp extra virgin olive oil
- 1 1/2 cups organic heavy cream
- 2 cups organic vegetable stock
- 4 Tbsps organic tomato paste
- Sea salt and spices (to taste)
Instructions
- Preheat oven to 400°F (200°C).
- Spread tomatoes and whole garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for about 25 minutes.
- In a large pot, sauté chopped onion in olive oil until translucent (about 5 minutes).
