Ingredients

  • 34 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsps organic tomato paste
  • Sea salt and spices (to taste)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread tomatoes and whole garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for about 25 minutes.
  3. In a large pot, sauté chopped onion in olive oil until translucent (about 5 minutes).
  4. Squeeze roasted garlic into the pot and add roasted tomatoes, vegetable stock, tomato paste, salt, and spices.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Blend soup until smooth, then stir in heavy cream and warm through without boiling.
