Ingredients

  • 2 slices whole-grain or sourdough bread
  • 2 tbsp cream cheese (or dairy-free spread)
  • 2 slices fresh tomato
  • 2 eggs
  • 1 cup baby spinach
  • 1 cup mushrooms, sliced (cremini or button)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter
  • Salt & pepper to taste
  • Chili flakes & parsley (optional)

Instructions

  1. Boil eggs for 7 minutes, then cool in ice water before peeling and halving.
  2. Toast bread until crispy.
  3. In a frying pan over medium heat, sauté sliced mushrooms and minced garlic in olive oil for about 5-6 minutes; season with salt and pepper.
  4. Wilt the baby spinach in the same pan until tender.
  5. Assemble by spreading cream cheese on one slice of toast, topping with tomato slices. On the other slice, add sautéed mushrooms. Serve with jammy eggs and wilted spinach.
