Ingredients

Scale
  • pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey
  • Optional: 1 teaspoon Dijon mustard, minced garlic, red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss halved Brussels sprouts with olive oil, salt, and pepper until well coated.
  3. Spread the sprouts cut-side down on a parchment-lined baking sheet. Ensure they’re not overcrowded.
  4. Roast for 20-25 minutes or until golden brown and crispy, flipping halfway through.
  5. Meanwhile, in a small saucepan over medium heat, combine balsamic vinegar, honey, and optional Dijon mustard. Simmer for 2-3 minutes until slightly thickened.
  6. Toss the hot roasted Brussels sprouts with the warm glaze immediately after roasting.
  7. Serve hot, garnished with red pepper flakes if desired.
