  • 2 pounds ground beef (or ground chicken/turkey)
  • 2 yellow onions
  • 2 poblano peppers
  • 28 oz crushed fire-roasted tomatoes
  • 8 oz tomato paste
  • 6 oz cream cheese
  • 2 cups shredded cheddar cheese
  • Chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt for serving

Instructions

  1. Prepare all ingredients by chopping onions and poblano peppers and measuring spices.
  2. Brown the ground beef in a skillet over medium heat; drain excess fat.
  3. In the crockpot, combine browned meat, onions, poblano peppers, spices, crushed tomatoes, tomato paste, hot sauce, butter, bay leaves, salt, and broth.
  4. Cover and cook on low for about 120 minutes.
  5. Stir in cream cheese until melted; then add cheddar cheese about 30 minutes before serving.
  6. Remove bay leaves before serving and top with avocado, cilantro, green onions, and Greek yogurt.
