  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the room temperature egg and vanilla extract; mix well.
  4. Gradually combine flour, salt, and baking powder until just mixed.
  5. Scoop out cookie dough onto the baking sheet, flatten slightly, and create space in the center for filling.
  6. Bake for 8–9 minutes; cool on the baking sheet before serving.
