- 3 cans condensed cream of chicken soup
- 1 cup chicken broth
- 2 cups uncooked Minute Rice
- 2 cups cooked shredded rotisserie chicken
- 2 cups frozen mixed vegetables
- 3 cups grated cheddar cheese
Instructions
- Preheat oven to 375°F.
- In a mixing bowl, combine cream of chicken soup and chicken broth until well blended.
- Grease a 9×13 casserole dish with cooking spray.
- In the prepared dish, layer uncooked rice, shredded chicken, frozen vegetables, garlic powder, onion powder, Italian seasoning, pepper, scallions, and one cup of cheddar cheese.
- Pour the soup mixture over the ingredients and mix until evenly coated.
- Cover tightly with foil and bake for 45 minutes.
- Remove from oven, add remaining cheese on top, then bake uncovered for an additional 10-15 minutes until cheese is melted.
