Ingredients

  • 3 cans condensed cream of chicken soup
  • 1 cup chicken broth
  • 2 cups uncooked Minute Rice
  • 2 cups cooked shredded rotisserie chicken
  • 2 cups frozen mixed vegetables
  • 3 cups grated cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine cream of chicken soup and chicken broth until well blended.
  3. Grease a 9×13 casserole dish with cooking spray.
  4. In the prepared dish, layer uncooked rice, shredded chicken, frozen vegetables, garlic powder, onion powder, Italian seasoning, pepper, scallions, and one cup of cheddar cheese.
  5. Pour the soup mixture over the ingredients and mix until evenly coated.
  6. Cover tightly with foil and bake for 45 minutes.
  7. Remove from oven, add remaining cheese on top, then bake uncovered for an additional 10-15 minutes until cheese is melted.
