  • 64 ounces chicken stock
  • small bunch fresh sage
  • 1 large head of garlic
  • 2/3 cup olive oil (or other preferred vegetable oil)
  • 1 large egg (separated)
  • 1 tsp Dijon mustard
  • pinch salt

Instructions

  1. Heat the chicken stock and sage in a large Dutch oven until simmering.
  2. Prepare garlic by removing skins, slicing in half, and discarding the shoots.
  3. Boil garlic in a small saucepan for 3-4 minutes; drain.
  4. Mash softened garlic with a fork and add to the simmering stock.
  5. Blend egg yolk, mustard, salt, and oil in a jar using an immersion blender until emulsified.
  6. Strain the soup if desired for smoothness; return to pot.
  7. Temper mayonnaise with hot soup before stirring into the pot.
  8. Gently reheat without boiling and serve topped with croutons and olive oil.
