  • 2 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • 1 clove garlic, minced
  • Fresh parsley, chopped (for garnish)
  • ½ cup milk

Instructions

  1. Boil the cubed potatoes in salted water for about 15 minutes until tender. Drain, then mash with butter and milk until creamy.
  2. In a skillet over medium heat, add olive oil and butter. Season chicken breasts with garlic powder, salt, and pepper; cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté onions until translucent. Add mushrooms, red and yellow bell peppers, and minced garlic; season with salt and pepper. Cook until veggies are softened.
  4. To serve, place a generous scoop of mashed potatoes on each plate, top with chicken, surround with sautéed vegetables, and garnish with fresh parsley.
