- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 medium potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp garlic powder
- Salt & pepper
- 1 clove garlic, minced
- Fresh parsley, chopped (for garnish)
- ½ cup milk
Instructions
- Boil the cubed potatoes in salted water for about 15 minutes until tender. Drain, then mash with butter and milk until creamy.
- In a skillet over medium heat, add olive oil and butter. Season chicken breasts with garlic powder, salt, and pepper; cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté onions until translucent. Add mushrooms, red and yellow bell peppers, and minced garlic; season with salt and pepper. Cook until veggies are softened.
- To serve, place a generous scoop of mashed potatoes on each plate, top with chicken, surround with sautéed vegetables, and garnish with fresh parsley.
