- 3 medium potatoes, peeled & cubed
- 10–12 medium shrimp, peeled & deveined
- 1 cup broccoli florets
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 2 tbsp butter
- 1 tbsp butter

- 1 tsp paprika
- Salt & black pepper, to taste
- Pinch of salt & pepper
- 1 cup milk (more if needed)
Instructions
- Boil the cubed potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter, milk, salt, and pepper until smooth.
- In a skillet, heat olive oil over medium heat. Add broccoli and diced peppers; sauté for 4-5 minutes until tender but vibrant.
- In another skillet, melt butter with olive oil. Sauté minced garlic for 30 seconds, then add shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink.
- Serve mashed potatoes on one side of the plate with sautéed veggies and shrimp beside them.
