  • 6 oz Velveeta cheese
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Cook rotini pasta in salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken pieces seasoned with Cajun spices until golden brown (6-8 minutes).
  3. In the same skillet, sauté minced garlic in melted butter, then add heavy cream and milk. Stir in Velveeta until melted.
  4. Mix in Parmesan and mozzarella; simmer until thickened. Adjust seasoning with salt and pepper.
  5. Toss cooked rotini in the sauce until well coated. Serve topped with chicken and garnished with parsley.
