  • 4 boneless, skinless chicken thighs
  • 8 cups reduced sodium chicken broth
  • 1/4 cup light soy sauce
  • 1/4 cup mirin
  • 35 cloves garlic
  • 2-inch piece fresh ginger
  • 8 oz fresh shiitake mushrooms
  • 5 oz baby spinach
  • 12 oz ramen noodles

Instructions

  1. In a large pot, combine broth ingredients and bring to a boil. Reduce heat to simmer for 15-20 minutes.
  2. Season chicken thighs with black pepper. In a skillet, heat vegetable oil over medium-high heat and cook chicken for about 4–5 minutes per side until golden brown.
  3. Whisk together glaze ingredients (soy sauces, brown sugar, ginger, garlic) and pour over the chicken in the skillet; cook until thickened, about 5 minutes.
  4. Remove chicken from heat and slice thinly.
  5. Strain the broth into a bowl to remove solids and return to pot; add mushrooms and cook for an additional few minutes before adding spinach.
  6. Cook ramen noodles according to package instructions; divide among bowls.
  7. Pour hot broth over noodles, top with sliced chicken, and garnish with green onions.
