  • For the Streusel Topping: 1/2 cup brown sugar, 1/3 cup gluten-free flour blend, 2 Tablespoons sugar, 2 Tablespoons cinnamon, 1/4 cup butter, melted
  • For the Maple Glaze: 1/4 cup butter, 1 cup powdered sugar, 2 Tablespoons pure maple syrup, pinch of salt, 2–3 Tablespoons of milk

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan with parchment paper and non-stick spray.
  2. In a bowl, whisk together pumpkin puree, oil, eggs, and sugars until smooth.
  3. In another bowl, mix the gluten-free flour with spices and dry ingredients.
  4. Combine wet and dry ingredients gently until just mixed; pour into the prepared loaf pan.
  5. For the streusel topping, mix the ingredients until crumbly; sprinkle on top of the batter.
  6. Bake for 60–80 minutes until golden brown and a toothpick comes out clean.
