  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Season chicken breasts with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice.
  2. Grill chicken on medium-high heat for 5–6 minutes per side until cooked through.
  3. Toss halved Brussels sprouts with olive oil, salt, and pepper; roast at 200C (390F) for about 20 minutes.
  4. In a saucepan over medium heat, melt butter and whisk in flour for one minute. Gradually add milk, stirring until thickened. Mix in minced garlic and Parmesan until smooth.
  5. Assemble by slicing grilled chicken and placing it in a bowl with roasted Brussels sprouts; top generously with creamy sauce.
