  • 1 large piece of flank steak (up to 3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder (or hot sauce)
  • 2 tsp lime zest (optional)

Instructions

  1. Prepare the marinade by combining all ingredients in a bowl. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
  2. Remove the steak from the refrigerator about 30 minutes before grilling to allow it to reach room temperature.
  3. Preheat your grill to medium-high heat and oil the grates with a paper towel dipped in olive oil.
  4. Grill the flank steak for approximately 4-5 minutes per side for medium-rare or about 6 minutes per side for medium doneness.
  5. Use a meat thermometer to check for doneness (140-145°F for medium-rare).
  6. Let the steak rest for about 5 minutes before slicing against the grain.
