  • 6 ounces mozzarella pearls (fresh)
  • 1 demi baguette
  • ½ cup basil pesto
  • Gel food coloring (black)
  • 12 ounces cherry tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • Red pepper flakes
  • Fresh basil for garnish
  • Balsamic vinegar glaze

Instructions

  1. Preheat the oven to 350°F.
  2. Place mozzarella pearls in a silicone skull mold and bake for 6–7 minutes until melted.
  3. Press down on the mozzarella with an oiled spoon and let cool completely.
  4. Raise oven temperature to 475°F, halve cherry tomatoes, drench in olive oil, season, and roast for 10–15 minutes.
  5. Slice baguette into ½-inch pieces and toast in the oven for about 8–10 minutes until golden.
  6. Mix basil pesto with black food coloring to achieve desired hue.
  7. Spread black pesto on toasted bread slices and return them to the oven for another 8–10 minutes until edges are golden.
  8. Top each slice with roasted tomatoes and mozzarella skulls.
  9. Serve on a platter drizzled with balsamic glaze and fresh basil.
