Ingredients

  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)
  • Salt & pepper to taste

Instructions

  1. Prepare all ingredients by chopping the chicken into bite-sized pieces and slicing the vegetables.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add chicken pieces and cook until golden brown (about 5-7 minutes). Remove from pan.
  3. In the same skillet, add another tablespoon of vegetable oil. Sauté minced garlic for about 30 seconds until fragrant.
  4. Add broccoli, green beans, red bell pepper, and yellow bell pepper to the pan. Stir-fry for about 3-4 minutes until tender-crisp.
  5. Return the cooked chicken to the pan, then add soy sauce, honey (or maple syrup), sesame oil, salt, and pepper. Stir well for an additional 2 minutes.
  6. Serve the stir-fry over warm mixed rice.
