  • 10 oz zucchini
  • 10 oz yellow squash
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • 1/3 cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Wash and slice the zucchini and squash into thin rounds. Dice the chicken breast into small pieces.
  2. In a bowl, season the chicken with salt, pepper, garlic powder, onion powder, and 1 teaspoon Italian seasoning.
  3. Heat a skillet over medium heat, adding 1 tablespoon olive oil and butter.
  4. Cook the seasoned chicken in the skillet until golden brown (5–7 minutes).
  5. Push the chicken to one side and add zucchini and squash to the other side; sprinkle with remaining Italian seasoning.
  6. Sauté vegetables until tender (3–4 minutes), then combine everything in the skillet.
  7. Sprinkle parmesan cheese and drizzle fresh lemon juice over the mixture before serving.
  8. Garnish with chopped parsley and additional lemon zest.
