  • 1 tbsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1/4 cup avocado oil
  • 2 eggs
  • 1/2 cup vegan cream cheese (optional)
  • 1/2 cup powdered sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine oat flour, baking soda, pumpkin pie spice, sea salt, pumpkin puree, coconut sugar, avocado oil, and eggs. Mix until fully incorporated.
  3. Pour the batter into the prepared loaf pan and spread it evenly.
  4. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow to cool completely before frosting with mixed vegan cream cheese and powdered sugar if desired.
