  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • Broth or water (enough to cover)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes in batches and brown on all sides (about 5-7 minutes). Remove the beef from the pot.
  2. In the same pot, add more oil if necessary. Sauté chopped onions until translucent (about 5 minutes). Stir in minced garlic and cook for another minute until fragrant.
  3. Add sliced carrots and parsnips to the pot, stirring well to combine.
  4. Return browned beef to the pot. Pour in enough broth or water to cover everything. Bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, stirring occasionally.
