  • 34 large ripe peaches (peeled and sliced)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon (for topping)
  • 1/4 cup granulated sugar (for filling)
  • 2 tablespoons all-purpose flour (for filling)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup brown sugar (for topping)
  • 1/4 teaspoon salt (for crust)
  • 1/4 teaspoon salt (for topping)
  • 1/4 cup unsalted butter (melted for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, sugar, and salt for the crust. Cut in cold butter until crumbly; press into the prepared pan and bake for 15-18 minutes until golden.
  3. In another bowl, mix sliced peaches with sugar, flour, lemon juice, and vanilla extract.
  4. Prepare crumb topping by mixing flour, sugars, cinnamon, and melted butter until crumbly.
  5. Spread peach filling over the cooled crust and sprinkle with crumb topping. Bake for 45-50 minutes until bubbly and golden.
  6. Allow to cool completely before slicing into squares.
