Ingredients
- 1 lb boneless skinless chicken (breast or thighs), chopped
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime
- 1 clove garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado, diced
- 1 head romaine or butter lettuce, leaves separated
- 1 cup canned black beans, rinsed
- 1 cup corn (canned or fresh)
- 2 tbsp chopped cilantro
- 1 cup sour cream or Greek yogurt
- 1 tbsp lime juice
- 1 tsp chipotle or smoked paprika
Instructions
- Heat olive oil in a non-stick skillet over medium heat. Add chopped chicken and cook until browned.
- Stir in honey, lime juice, minced garlic, cumin, smoked paprika, salt, and pepper. Cook until fully cooked through (8-10 minutes). Set aside.
- In a small bowl, mix sour cream (or Greek yogurt) with lime juice and chipotle or smoked paprika until smooth. Chill.
- Lay out lettuce leaves on a platter and fill each with cooked chicken. Top with diced avocado, black beans, corn, and red onion.
- Drizzle the sauce over each filled lettuce cup and serve warm.
