Ingredients

  • 1 lb boneless skinless chicken (breast or thighs), chopped
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned or fresh)
  • 2 tbsp chopped cilantro
  • 1 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp chipotle or smoked paprika

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Add chopped chicken and cook until browned.
  2. Stir in honey, lime juice, minced garlic, cumin, smoked paprika, salt, and pepper. Cook until fully cooked through (8-10 minutes). Set aside.
  3. In a small bowl, mix sour cream (or Greek yogurt) with lime juice and chipotle or smoked paprika until smooth. Chill.
  4. Lay out lettuce leaves on a platter and fill each with cooked chicken. Top with diced avocado, black beans, corn, and red onion.
  5. Drizzle the sauce over each filled lettuce cup and serve warm.
