Ingredients
- 1 lb boneless skinless chicken (breast or thighs), chopped
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of 1 lime

- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado, diced
- 1 head romaine or butter lettuce, leaves separated
- 1 cup canned black beans, rinsed
- 1 cup corn (canned or fresh)
- 1 cup Greek yogurt
- 1 tbsp lime juice
- 1 tsp chipotle or smoked paprika
- Salt, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add the chopped chicken and cook until browned.
- Stir in honey, lime juice, garlic, salt, pepper, cumin, and smoked paprika; cook for an additional 8-10 minutes until cooked through.
- In a separate bowl, mix Greek yogurt, lime juice, chipotle, and salt to form the sauce.
