Ingredients
- 2 large chicken breasts, cubed
- 10 oz rigatoni pasta
- 1/3 cup honey
- 1 ½ tsp freshly cracked black pepper
- 3 tbsp olive oil
- 2 tbsp butter
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- Salt to taste
- Sliced carrots and chopped green onions for garnish
Instructions
- Cook the rigatoni in salted boiling water until al dente. Drain and reserve some pasta water.
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown; set aside.
- In the same skillet, sauté sliced carrots for about 3-4 minutes. Add garlic and cook until fragrant.
- Lower heat and add butter, honey, soy sauce, and pepper to the skillet; simmer until thickened.
- Return chicken to the skillet; stir in cooked rigatoni and reserved pasta water as needed to adjust sauce consistency.
