Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the butter mixture alternately with the milk mixture (combined whole milk, key lime juice, zest, and vanilla), starting and ending with dry ingredients.
  4. Divide batter evenly between pans and bake for 28-32 minutes or until a toothpick comes out clean. Cool on wire racks.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar while mixing in key lime juice and zest until fluffy.
  6. Assemble the cake by layering frosting between cooled cake layers and covering the top and sides.
