Ingredients

  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt and black pepper to taste

Instructions

  1. Boil the eggs for 7-8 minutes. Transfer to ice water to cool before peeling and quartering.
  2. In a large bowl, mix together chopped romaine lettuce, diced cucumber, and halved cherry tomatoes.
  3. Top the salad base with sliced grilled chicken breast, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives.
