  • 8 small boneless chicken thighs
  • 2 cloves of garlic
  • 1 jalapeño pepper
  • 3 tablespoons of tomato paste
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 1/2 teaspoon of oregano
  • Fresh coriander
  • Juice of half a lime
  • Salt and black pepper
  • Red, green, yellow bell peppers, and onion for skewering

Instructions

  1. In a mini food processor, combine garlic, jalapeño, tomato paste, cumin, paprika, oregano, coriander, lime juice, salt, and pepper. Blend until smooth.
  2. Dice chicken thighs into bite-sized pieces and coat with the marinade. Refrigerate for at least 2 hours or overnight.
  3. Soak wooden skewers in water (if using), then thread marinated chicken and chopped vegetables onto the skewers.
  4. Grill over medium-high heat for about 15 minutes or bake in an oven at 425°F for approximately 25–30 minutes until fully cooked.
