Ingredients
- 8 small boneless chicken thighs
- 2 cloves of garlic
- 1 jalapeño pepper
- 3 tablespoons of tomato paste
- 2 teaspoons of cumin
- 2 teaspoons of paprika
- 1/2 teaspoon of oregano
- Fresh coriander
- Juice of half a lime
- Salt and black pepper
- Red, green, yellow bell peppers, and onion for skewering
Instructions
- In a mini food processor, combine garlic, jalapeño, tomato paste, cumin, paprika, oregano, coriander, lime juice, salt, and pepper. Blend until smooth.
- Dice chicken thighs into bite-sized pieces and coat with the marinade. Refrigerate for at least 2 hours or overnight.
- Soak wooden skewers in water (if using), then thread marinated chicken and chopped vegetables onto the skewers.
- Grill over medium-high heat for about 15 minutes or bake in an oven at 425°F for approximately 25–30 minutes until fully cooked.
