- 1 pound ground beef
- 1 can (14.75 ounces) cream-style corn
- 1 cup frozen corn
- 1 can (10 ounces) diced tomatoes and green chilies (Rotel)
- 1 packet (1 ounce) taco seasoning
- 2 cups shredded cheddar cheese
- 1 box (8.5 ounces) Jiffy cornbread mix
- 2 eggs
- ⅓ cup whole milk
Instructions
- Preheat your oven to 375°F (190°C).
- In a cast iron skillet, brown the ground beef over medium heat; drain excess grease.
- Stir in cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; cook for 5 minutes.
- Sprinkle 1 cup of shredded cheese over the beef mixture.
- In a bowl, mix Jiffy cornbread mix with eggs and milk until combined; pour this over the beef mixture.
- Bake for 20-25 minutes or until the cornbread is golden brown.
- Add another cup of cheese on top and bake for an additional 5 minutes until melted.
- Let cool slightly before serving.
